May 12-18 ENVY the Steakhouse presents a salute to favorite Epicurean Adventures of the past, created by executive chef Stefan Kauth over the last two years. For its four-course May Epicurean Adventure, served from 5 p.m.-10 p.m., Gunderloch 'Nackenheim Rothenberg' Spätlese, Rheinhessen 2005 enhances chilled Thai pepper soup with red curry, Thai basil and lemongrass yogurt; Reynold's Family Chardonnay, Napa Valley 2004 accompanies seared diver sea scallops with shellfish broth, smoked trout caviar and mashed potatoes; Stanley Lambert "Silent Partner" Barossa Valley 2004 complements lobster-stuffed filet with truffle sauce and sautéed spinach. May 27 Master chef/restaurateur Gustav Mauler of Spiedini pairs his popular Italian cuisine with Clos Du Bois wines for a Tuesday night out in Summerlin. For the 6:30 p.m. event, 2007 Pinot Grigio accompanies lemon ravioli pine nuts and shrimp; 2004 Sonoma County Merlot enhances wild mushroom bisque with a Parmesan crostini; 2005 Classic Cabernet Sauvignon Sonoma complements veal tenderloin in an eggplant crust with truffled mashed potatoes and a mélange of fresh vegetables. May 29 Gaetano's Ristorante's Italian cuisine will be paired with a "tour of Sicily" (Napa and Sonoma) wine dinner for a Thursday evening out in suburban Henderson. For the 7 p.m. event, sliced beefsteak tomatoes, fresh buffala mozzarella and roasted peppers topped with basil-infused olive oil is accompanied by Kendall Jackson Sauvignon Blanc; Pinot Noir La Crèma enhances homemade gnocchi with brown butter, sage and Parmesan cheese. Lemon sorbet refreshes the palate for the entrée choice of pan-seared Alaskan halibut with cherry tomatoes, asparagus, fresh basil and Kendall Jackson Chardonnay or a petite filet mignon with roasted shallots and a Cognac peppercorn sauce complemented by Stonestreet Cabernet. June 13 Roy's in Summerlin hosts its next Waina Hui (Wine Club) tasting on Friday from 4:30 p.m.-6 p.m. Accompanied by an array of sushi appetizers, wines from around the world are featured, as well as four Japanese sakés---Moon on the Water, Well of Wisdom, Divine Droplets and Dreamy Clouds---presented by Eric Swanson, a master sommelier of saké. The cost is $20 for members and $25 for non-members. Among perks that come with membership (for a one-time $20 fee) are invitations to wine tastings, 15 percent off wine-pairing dinners and 10 percent off bottled wine purchases for dinner before 6:30 p.m. The tastings of wines and enticing flavors of Roy's Hawaiian Fusion Cuisine are hosted the second Friday of every month.
