Profile: When he founded Adelaida Cellars in 1981, Le Cuvier was little more than a seed planted in the back of winemaker John Munch’s mind. But when Adelaida joined into partnership in the early 1990s, Munch saw the opportunity to begin creating his own Central Coast label. Although he stayed on at Adelaida until 1999, Munch now devotes his attention to the day to day details of his boutique operation. From the French for, "little barrel room," this tiny winery is appropriately named. Annual production from the cult winery is little more than 1,500 cases. However, with fine vineyard holdings, Munch manages to turn out a variety of styles, including Cabernet Sauvignon, Cabernet Franc and Chardonnay.
