Tasting Notes: A lovely, simple wine, Paraiso's Pinot presents a nose brimming with the promise of ripe cherries and cranberries. But instead of delivering flavor of equal intensity, it offers a light body with overtones of oak and earth. What it lacks in complexity, it makes up for in elegance. Because of its food-friendly style, we would recommend serving it with anything from poached salmon to turkey dinner. (Date tasted 07/09/01)

Profile: As leading Central Coast vintners, the Smith family of Paraiso Springs is recognized throughout California for superior quality grapes. In addition to supplying cool-climate varietals to such wineries as Beringer, Mondavi, and Hess, the family started their own boutique winery in 1988, producing Chardonnay, Pinot Noir, and Syrah. With deference to their world-class fruit, the Smiths work to produce wines reflecting the terroir of their Monterey County vineyards.
