Here's a bubbly for lovers. Its heart is clearly Cordon Rouge while 18% Pinot Noir in the cuvée provides it with structure as well as that delicious hue of amber pink. Deep fruity notes of red currant and strawberries are balanced by the Chardonnay (22%). With its creamy linger on the palate it pairs particularly well with oysters and fresh shellfish. But really, it goes down nicely even with a more benign roasted chicken or a selection of ripe cheeses.
